Whilst pregnant with me, my Mother developed diabetes. I was a large baby weighing in at 10.2 pounds, the same as my older sister Julie. My brother on the other hand was a monster. He was a whopping 12 pound baby. When my Grandma and Granpda Smith went to visit him in hospital the nurse said "I hope you brought him a hamburger!"
My poor Mum. Birthing 5 babies and miscarrying 1. What we must have done to her body! As a kid, food played an important part in our home. We would go out for chinese dinners, birthdays were celebrated at the local steak house, KFC was a must and buffets were a regular. It didn't stop Mum from being the master of her own kitchen too. She would handmake spring rolls, bake pavlovas and every Sunday would be a huge feast. We would sit at our 12 seater dining table and spin that lazy susan full of dinner and desserts with great gusto. Our table was always LOUD, fun and exciting. It was full of family and often Mormon Missionaries or a homeless person. Sundays were my favourite evening. (Apart from when we ate out of course.)
It wasn't until I got married that I realised, I could not cook for the life of me. Poor Brad was put through some awful awful meals. But as the years progressed I found great joy in cooking and it became more exciting the more I learnt about different flavours, alternative cooking options and experimented. I even started to research the health benefits of different foods as I watched my Mum be hospitalised for different diabetic infections and even prepare for multiple amputations. It was then that I realised the importance of a healthy and balanced lifestyle and also genetics. So as much as I love the good old treat, I also enjoy the good old vege and fruit juice. I have even started bribing my kids to drink this with me and yes, I will do anything it takes to encourage them to try different flavours and widen their palette.
So here we have one of my favourite juices. Hopefully to inspire and counteract all of the Uber Eats I have done of late.
GINGER, CARROT, CELERY, CUCUMBER & APPLE JUICE - tablespoon of crushed ginger
- couple of carrots
- some celery
- some cucumber - 2 pink lady apples
